Slow Cooker Italian Beef Sandwiches
Prep time: 5-10 minutes
Cook time: 9-12 hours
Serves 6
Ingredients:
3lb beef roast (chuck, arm or round - whatever is on sale)
1 envelope Good Seasons Zesty Italian salad dressing mix
1 small jar (8oz) pepperoncini pepper slices or mild banana pepper rings, reserve 1 TBS of juice, drain the rest
1 small jar (8oz) Hot Giardiniera - do not drain
1 can (14.5oz) of beef broth
1 package provolone cheese slices
6 hoagie (sub) rolls

Instructions:
- Cut the roast into large chunks and place in the bottom of a 6 qt slow cooker. For extra flavor, brown the chunks in a hot skillet before adding to the crock pot.
- Sprinkle with salad dressing mix.
- Add the peppers and the reserved juice into the pot.
- Add Giardiniera, including the oil it was packed in.
- Add the can of beef broth.
- Stir it a little bit to get things evenly distributed.
- Place a lid on top then cook on low until meat shreds easily with a fork (9-12 hours).
- Shred the meat, stir it up and serve it on rolls.
