Summertime CSA Salad
Ingredients
- 4 ears fresh sweet corn
- 2 medium cucumbers
- 4 radishes
- 1 large bell pepper (I used a purple one)
- 1 tiny red onion or large shallot
- 2 tsps gochugaru or other mild chili powder
- 2 tsps granulated garlic
- 1 tsp kosher salt
- 1 tsp ground black pepper
- 3 TBS lime juice
- 1 C roughly chopped cilantro (optional)
- 1/4 C mayo (optional)
Preparation
- Cut the kernels off the cobs of sweet corn.
- Place a small ramekin or bowl upside down in a large mixing bowl.
- Hold the corn vertically and rest the base of the cob on the small bowl.
- Slice down the cob with a sharp knife.
- The kernels will fall into the big bowl - leave them there.
- Remove the little bowl.
- Peel the cucumbers, cut the ends off, cut into quarters and slice into 1/4-inch pieces.
- Cut the ends off the radishes, cut into quarters and slice into 1/8-inch pieces.
- Cut the bell pepper in half and remove the seeds. Cut into bite size pieces.
- Cut the onion/shallot in half and slice thin
- Toss vegetables, spices and lime juice into a bowl and mix well
- Cilantro and/or mayo can be mixed in before serving or served on the side for people to add their own.
