Cajun Soup

Crap-Toss Cajun Soup
~45 minutes, serves 6

Ingredients:
1 medium yellow onion, diced
1 small carrot, diced
1 stalk celery, diced
1 TBS vegetable oil
12 oz chicken andouille sausage, diced
1 lb medium (41/50 ct) raw shrimp, peeled and thawed
1 16oz can red beans, drained and rinsed
1 16oz can corn, drained (or ½ bag 16oz frozen corn)
½ C Basmati rice
1 QT chicken stock
1 QT vegetable stock
1 TBS Cajun seasoning
Salt
Fresh ground black pepper

Instructions:
In a large pot (6qt dutch oven), heat oil over medium heat. Add carrot, celery, onion and a big pinch of salt. Sautee until softened. Turn up heat to medium high, add sausage, stirring frequently until sausage starts to brown. Add beans, corn, rice, stock and seasoning, another pinch of salt and pepper to taste. Bring to a boil and simmer for 25 minutes until rice is cooked. Add shimp and simmer for an additional 3 minutes until shrimp are pink. Enjoy!
