Taco Seasoning

Oh, tacos, you are the tasty time saver of the dinner world! I have yet to meet anyone who does not like tacos. Growing up in the 80's, Ortega Taco Dinner was a staple. It was ready in 15 minutes and everyone in the family enjoyed the oh-so-salty beef with shredded cheddar, lettuce and tomatoes on the crunchy taco shells fresh from the plastic.

I started stocking my own kitchen at 20, and I tried to keep taco seasoning on hand. In my 30's, I realized buying the mix is not cost effective when I have all of the ingredients in my spice drawers. In addition, I can cut the sodium and increase the spice levels to better suit my taste. I am now a firm believer that everyone should be making their own taco seasoning! Keep it in a plastic bag, a jar or a plastic storage container. It will keep for months and months in the pantry. As with any spice, you should probably give it a sniff after a year, if it doesn't smell like tacos, throw it away!

Ingredients:

2 TBS Chili Powder
1 TBS Garlic Powder
1 TSP Ancho Chili Powder
1 TBS Cocoa Powder
2 TBS Paprika
1 TBS Oregano
1/2 TBS Coriander
1 TSP Red Pepper Flakes
1 TBS Onion Powder
1 1/2 TBS Cumin
1 1/2 TSP Kosher Salt
1/2 TSP Fresh Ground Pepper
1 TBS Corn Starch

This recipe will make around 3/4 C of seasoning. The standard measure is 2 TBS per pound of filling. Put all of this into a container and shake it up. That's all there is to it! Of course, you can add more red pepper flakes or cayenne pepper if you like it really spicy. The stuff above is not hot, so even the little ones should like it.
